The guava pie is one of the favorite desserts of Cubans. There are two ways to make it: with a top or without it. On this occasion, I present it with a top, with a shortcrust pastry that crumbles in your mouth and a generous filling of guava jam.

Method
- Divide the dough into two equal parts. Place one of them on a lightly floured surface and roll it out with a rolling pin until you achieve a thickness of about 0.3 cm.
- Cut the dough to match the shape of the pan you are going to use. Repeat the same with the other half.
- Preheat the oven to 200 °C.
- Grease the bottom of the pan with butter and sprinkle it lightly with flour, so you avoid the dough sticking when removing the pie. Avoid deep pans, unless they are removable.

CiberCuba - Place one of the dough layers in the pan and prick it with a fork so it does not puff up.

CiberCuba - Add the guava jam and cover everything with the second layer of dough.

CiberCuba - Fold the edges and press them well so they do not open when baking.
- If you want the pie to have a shiny golden color, brush it lightly with beaten egg. This step is optional.

CiberCuba - Make some small holes with a knife in the center of the pie so the dough does not puff up.
- Bake at 200 °C for about 15 minutes, until the dough is golden, crisp and evenly toasted. The exact time depends on your oven and the amount of dough.

CiberCuba - Let the pie cool before cutting it: the jam inside can burn.
