Papa rellena is a dish for using leftovers, because its picadillo filling can come from what was left over from a previous meal. It is common on the home menu, but it is also sold in cafeterias and restaurants.

Method

  1. Peel, wash and cut the potatoes.
  2. Boil them with a little salt and the garlic cloves until they are soft.
  3. Drain them and prepare a mash to which you will add the butter.
  4. Form balls with the mash, hollow out the center of each one and fill them with the picadillo. Close the ball well with the same mash.
  5. Pass each ball through beaten egg and then through the breadcrumbs or crushed crackers.
  6. Fry them in hot oil until they are golden.
