Method

  1. Put a pot with water and a pinch of salt. As soon as it comes to a boil, add the macaroni and boil them as you normally do with pasta.
  2. Once cooked, drain them well and spread them on a tray or large plate, well separated from each other so they dry properly. You can place them on parchment paper or directly on the tray.
  3. Take the tray out into the sun and let them dry for 1 day or more, depending on the weather. It is advisable to bring the tray in at night and take it out again the next day. They must be so dry that they look raw.
  4. To fry them, heat the oil well in a pot or frying pan. It has to be very hot, because the macaroni is already cooked and when it falls into the oil it will puff up and burst very quickly.
  5. Fry a few at a time and remove them in a couple of minutes or less, as soon as they are golden.
  6. Transfer them to a plate with paper towels so they absorb the fat.
  7. Let them cool down, sprinkle a little salt on them and serve.
