For the spread

To roast your own peppers (optional)

Method

Roasting the peppers (optional)

  1. If you do not have jarred roasted peppers, roast them yourself before preparing the spread. On a gas stovetop: wash the pepper and place it directly over the flame or on a griddle.
  2. Roast it, turning it constantly, until the skin is black and blistered all over.
  3. In the oven: preheat the oven to 200 °C.
  4. Wash the pepper, cut it in half, and place it on a baking tray with the skin facing up.
  5. Drizzle it with a little oil.
  6. Bake for 25 to 35 minutes, turning it from time to time, until the skin blackens in some spots.
  7. Once roasted, remove the burnt skin, seeds, and internal filaments, and cut it into strips.

Cheese and pepper spread

  1. In a deep bowl, mix the cream cheese with the roasted red peppers.
  2. Blend the mixture with an immersion blender until you obtain a uniform texture and extract all the flavor of the pepper. If you do not have an immersion blender, use a regular blender.
