Method
Searing the snapper
- Place a frying pan over medium heat with a little salt and let it get hot.
- When hot, place the snapper fillets with the skin side down. This way the skin browns and the fillet stays stretched without shrinking.

CiberCuba - Leave them like this, over medium heat, for 5 minutes. Remove them from the pan and set aside.
Sauce and cooking the fish
- In a saucepan, heat the olive oil and add the onion cut into brunoise.
- When the onion starts to change color and brown, add the peppers, the garlic and then the diced tomato.

CiberCuba - Stir to integrate everything, check the seasoning of salt and pepper and let cook for about 8 minutes.
- When the sauce is well heated, add the dry wine and let reduce over low heat until it becomes syrupy.
- Incorporate the reserved snapper fillets and cover them with the sauce carefully so they do not break.
- Cover the saucepan and cook over medium heat for about 5 minutes. After that time, the fish will be ready to plate.
Macaroni side dish with cheese
- Cook the macaroni in boiling water in the usual way. When they are soft, drain them and set aside.
- In a saucepan, heat the heavy cream over medium heat and, before it reaches a boil, add the mozzarella cheese. Stir well until integrated.
- Add the macaroni to the cheese sauce, mix and adjust salt and pepper. Serve the snapper in sauce on a bed of macaroni.
