In Cuba, we know the blue crab as jaiba. This recipe is inspired by a photograph of very juicy rice served in a paella pan by the sea: a round-grain rice with reddish and abundant broth, pieces of crab and shredded meat. We adapt it with a good Cuban sofrito of garlic, onion, ají, tomato and dry wine. The key is that it remains creamy, never dry: the broth must bind with the starch of the rice and still be visible on the plate. This is a culinary interpretation inspired by the image, not the original restaurant recipe.

Method

Prepare the blue crab and concentrate the broth

  1. Clean the blue crabs, removing the gills and inedible internal parts. Cut the bodies in half or into quarters, separate the claws and give them a gentle tap to crack the shell without shattering it. Reserve the large pieces to serve on top of the rice.

  2. In a pot, place the 1.8 liters of broth with the half onion, the garlic clove and the bay leaf. When simmering gently, add the jaiba pieces. Cook at a moderate boil for about 12-15 minutes, until the meat is well cooked and the shells acquire their characteristic color.
  3. Remove the jaibas with a slotted spoon and keep them covered. Strain the broth, check that it has no shell fragments and reserve it very hot. If you wish, extract some of the cooked meat from some pieces, leaving no shell remnants, and keep the most attractive pieces for the end.

Prepare the Cuban sofrito

  1. Heat the oil in a deep paella pan, low cazuela or wide skillet. Sauté the onion and peppers for 6-7 minutes over medium heat until tender. Add the ají cachucha, if using, and the three garlic cloves; cook for 1 more minute without burning them.
  2. Add the crushed tomato and tomato concentrate. Cook for 5-6 minutes, stirring, until you obtain a thick sofrito with a red color. Incorporate the paprika and, if desired, the saffron or bijol; mix for a few seconds.

  3. Pour in the dry wine, stir and let it boil for 2 minutes to reduce it and integrate its flavor with the tomato and peppers.

Cook the rice and achieve the creamy texture

  1. Add the round-grain rice without washing it, to preserve its starch, and sauté it for 1 minute in the sofrito. Incorporate approximately 1.3 liters of the hot broth, mix and bring to a gentle boil.
  2. Cook over medium heat for about 16-19 minutes, depending on the rice, stirring gently every few minutes. Add the remaining hot broth little by little as needed: there must be visible liquid around the grains and the bottom should not dry out or stick. Adjust salt and pepper.
  3. When there are 5-6 minutes left, distribute the already cooked jaiba pieces on top and incorporate the shredded jaiba meat, if using. Move them carefully so they warm up and release flavor without breaking too much.

  4. Remove from heat when the rice is tender and the broth has thickened slightly, but remains abundant and fluid, as in the photograph. Let it rest for only 1-2 minutes and serve in the same paella pan with parsley or cilantro and lemon or lime wedges on the side. If it thickens before serving, add a small ladle of hot broth and stir.
