The potato is one of the most versatile tubers in the kitchen. It is native to America, from the Andes mountain range, where it has been cultivated for more than 10 000 years, and today there are more than 5000 varieties around the planet. It was even the first vegetable to be grown in space. In Cuba recently, it has been difficult to find, but for many decades it has been the food that has sustained households.
Chorizo makes a perfect combination with potatoes: it is a hearty dish that will leave no one indifferent at home.
