A very common recipe in Cuban cuisine, where each cook adds their own special touch. Here is the basic version: delicious, easy to make, and with a truly Cuban flavor.

Method

  1. Pound the pork steaks well. This step is important: pork has a lot of fat and, if you don't pound it beforehand, the steak will curl up while cooking.

  2. Season with salt, pepper, and oregano to taste on both sides of each piece.

  3. In the mortar, crush the garlic with a pinch of salt until minced.
  4. Rub the crushed garlic over the meat and add the juice of the sour orange (or lemon), taking care that no seeds fall in.
  5. Let the meat marinate in this mixture for about 30 minutes.
  6. Place the skillet over medium heat with the oil. Add the meat with its marinade, cover it so it cooks in its own juices, and turn it occasionally to brown on both sides.
  7. While it cooks, finely chop the parsley and cut the onion into julienne strips.

  8. When you notice the meat is almost cooked to your liking, add the onion and parsley.

  9. Uncover the skillet and let the juices reduce a bit so everything browns. Enjoy!
