Method

Cooking the pumpkin (if not already cooked)

  1. Peel the pumpkin and cut it into small pieces.
  2. Boil it in a pot with plenty of water and one teaspoon of salt for 15-20 minutes, or until soft.
  3. Drain it and place it on paper towels to remove excess water.

Preparing the mixture

  1. With a fork, mash the pumpkin until you obtain a smooth puree.
  2. Incorporate the sugar, egg, cinnamon, butter, and flour. Mix well until a homogeneous dough is formed.
  3. Adjust the amount of flour according to consistency: if the dough is too liquid, add more flour until it is manageable; otherwise, the fritters will fall apart when frying.

  4. Place the mixture in the refrigerator for 15 minutes to firm up.

Frying the fritters

  1. Heat the oil in a wide skillet.
  2. Using two spoons, drop portions of dough into the hot oil, forming fritters of your preferred size.
  3. Fry on both sides until golden. If the dough falls apart when frying, add more flour.
