Method
- Peel and wash the potatoes. Cut them into cubes and boil in salted water, taking care not to overcook them.
- When ready, drain them and let them cool.
- Boil the chicken in salted water with the bay leaf until the meat is tender. Remove it from the pot and reserve the broth for other preparations.
- Shred the chicken, discard the bones, and set aside the meat.
- In another pot, boil the eggs for 10 to 15 minutes. Let them cool, peel them, and cut them as desired.
- Chop the olives into thin rounds and cut the roasted pepper into thin strips.
- In a large bowl, mix everything you have prepared: start with the potatoes, then the chicken meat, the onion, the eggs, some of the peppers, and the olives.
- Finally, add the mayonnaise and, if desired, a tablespoon of mustard. Mix carefully so that the potatoes do not break apart.
- When everything is combined, taste for salt and add pepper if you like.
- Cover well and refrigerate for at least half an hour.
- Decorate with strips of roasted sweet pepper, olives, or other ingredients to your taste. Enjoy!
