This flan is derived from the classic milk and egg flan, with one difference: it includes coconut, which gives it a very special flavor and mouthfeel. A delicious dessert to impress your guests.

Method

  1. Caramelize the molds with the sugar, as in the traditional flan preparation, and set them aside.
  2. Preheat the oven to 170 °C.
  3. Place the coconut milk, condensed milk, eggs, and grated coconut in the blender. Blend for a short time, just until the ingredients are well incorporated.
  4. Pour the mixture into the caramelized molds.
  5. Place the molds in a pan with water up to half their height and bake in a water bath until the flan sets: about 15-20 minutes if they are individual molds or 35-40 minutes if it is a large mold.
  6. When set, remove them from the oven and let them cool to room temperature.
  7. Refrigerate until well chilled and serve with a teaspoon of coconut dulce or a little grated coconut sprinkled on top.
