For the flan

For the caramel

Method

Caramel

  1. Pour the sugar and water directly into the flan mold and place it over heat to make the caramel.
  2. Swirl the mold so the caramel coats the bottom and all sides well. Do not let it brown too much, or it will have a bitter taste.

Flan

  1. Preheat the oven to 350 °F (about 175 °C).
  2. Drain the pineapple, reserve 4 slices for decorating, and cut the rest into small chunks.
  3. In a separate bowl, mix the condensed milk, heavy cream, eggs, and pineapple chunks.
  4. Pour the mixture into the caramelized mold and cover with aluminum foil.
  5. Bake in a water bath in the oven for about 45 minutes, or until a knife inserted comes out clean.

Assembly

  1. Let the flan cool and unmold it.
  2. Decorate with the reserved pineapple slices and maraschino cherries.
