Cubans use the pressure cooker, or express pot, a lot for cooking. It is a quick way to tenderize foods and gives us time for other things, especially after a hard day's work.

This express roast chicken is delicious and quick to make. It has few ingredients and leaves you with a delicious sauce to accompany the rice.

Method

  1. Season the chicken pieces with salt and pepper to taste.
  2. Cut the onion into julienne, the green pepper into rings and finely chop the parsley.
  3. Place the pressure cooker over medium heat with the oil. When hot, add the chicken and let it brown on all sides.

  4. Add the onion, bay leaf, prunes, green pepper and parsley. Stir to mix everything well.
  5. Cook for a few minutes until the chicken begins to brown on the outside.
  6. Cover everything with the dry wine and close the lid of the pressure cooker.
  7. Cook over medium heat until the pressure cooker builds pressure. Then lower the heat and let it cook under pressure for about 15 minutes. Do not get distracted: if your pressure cooker expels too much steam, the chicken may become too dry.
  8. Serve garnished with a little chopped parsley and accompany with white rice and a delicious salad.
