Fufú de plátano is a typical Cuban recipe that, it is said, has African origins. It comes to us from our African grandparents: it was a dish proper to the food of enslaved people, perhaps because of the energy provided by the plantain or because it was so economical.
It is simple and humble, but delicious as a side dish for pork and combines perfectly with most Cuban meats and stews. Enjoy!

Method
- Wash and peel the plantains.

CiberCuba - Cut them into medium pieces and boil them in the water with a splash of lemon. Add salt to your taste.
- When the plantains are soft, leave them in the hot water until the moment to prepare the fufú.
- In a skillet, heat the lard. Add the garlic and the onion cut in brunoise.
- When the onion becomes translucent, add the well-drained plantains (reserve the cooking water). Leave them on the heat for a few minutes, stirring.
- Remove the skillet from the heat and make a mash, trying to integrate all elements well.
- If you notice it is too dry or hard, add a little of the plantain cooking water until you achieve the consistency you like.
- Adjust the salt level and add pepper if you like. Serve hot.
