Lentils are a very delicious, nutritious and economical dish. That is why they are a star dish on the most humble tables. These legumes have been cultivated for thousands of years and are believed to be native to the Middle East, although today they are eaten all over the planet.

This version, with chorizo, blood sausage and pork ribs, is made in a pressure cooker and is ready in less than an hour.

  3. If you wish, add the pepper cut into pieces; if not, reserve it for the sofrito. Cover all ingredients with water.
  4. Cover the pot and place over medium heat until pressure is reached. Then lower the heat and let cook for 20 minutes.
  5. Meanwhile, in a saucepan, heat the oil or lard. Add the onion cut into brunoise and the crushed garlic.
  6. Incorporate the pepper cut into small cubes and let cook until everything starts to release its juices.
  7. Add the tomato sauce, stir well and let cook over low heat for a few minutes, stirring the sofrito frequently.

  8. Remove the pressure cooker from the heat, open it and check the doneness of the lentils: they should be tender, but not too soft.
  9. Check the amount of broth and, if you wish, add a little more water. Stir well so it does not stick to the sides of the pot and season with salt, cumin and pepper to your taste.
  10. Add the sofrito, stir well and let cook with the pot half covered for 5 to 10 minutes more, until the lentils reach the density you like. Stir often so they do not stick to the bottom.
  11. Before serving, cut the chorizo and blood sausage into pieces. Serve the lentils very hot. Enjoy!
