This rice is one of those dishes that fills the house with aroma and brings everyone to the table. With tender ribs, a flavor-packed sofrito and that juicy point that makes it creamy, it becomes irresistible.

The final touch of fresh cilantro elevates it even more and turns it into a dish to repeat.

Method

  1. In a wide casserole or deep paella pan, heat a little oil and brown the ribs until they are well seared. Remove them and set aside.
  2. In the same oil, sauté the onion, pepper and garlic, all finely chopped.
  3. Add the grated tomato and white wine and let it reduce for about 4 minutes, until it thickens.
  4. Incorporate the paprika and mix quickly so it does not burn.
  5. Return the ribs to the casserole and add the bay leaf, rosemary and hot broth.
  6. Cover and cook over medium heat for 20 minutes so the meat releases its flavor.
  7. Adjust the salt and add the rice along with the saffron.
  8. Cook uncovered over medium-high heat for the first 8 minutes and then over medium-low heat for about 10 more minutes, stirring occasionally to make it creamy.
  9. Turn off the heat, cover the casserole and let it rest for 2 minutes.
  10. Before serving, sprinkle the chopped fresh cilantro on top.
