A delicious and healthy recipe, rich and easy to make. The hogfish is one of the most common species in Cuban waters: its meat is white and flavorful, which is why it is so highly valued in the national market. Here we prepare it with a simple marinade of lemon, garlic, onion and oregano, and bake it in the oven.

Method
- Wash the fish, remove the entrails and scale it well.
- Make three or four crosswise cuts in the skin on each side, so that the marinade juice penetrates the meat.
- Season with salt and pepper to your taste.
- Cut part of the onion into thin rounds and set them aside to garnish the fish at the end.

CiberCuba - Prepare the marinade: combine the lemon juice, the garlic well crushed, a little oregano and the rest of the onion cut into small cubes. Mix everything together.
- Rub the marinade on both sides of the fish and let it rest for at least two hours.
- Preheat the oven to 200 °C.
- Grease the baking tray with olive oil and place the marinated fish. If you wish, place potato rounds at the bottom, but remember to salt and pepper them.
- To keep it juicy, cover the tray with aluminum foil and bake for 20 minutes at 200 °C.
- Uncover and leave it in the oven for 10 more minutes, so that the skin takes on a golden color and becomes crispy.
- Always check the doneness: the times depend on the weight of the fish and each oven.
- Serve hot, garnished with the onion rounds you set aside. If you wish, add a Cuban mojo on top.
