Snapper is an ideal fish to cook over a fire, as golden fillets on a griddle or in the oven. In this recipe we present it baked on potatoes, a quick, traditional and easy way to prepare it.

Method

  1. Clean the snapper of scales and entrails. You can bake it with the head or reserve it for other preparations, such as a soup.
  2. Make some crosswise cuts in the back so that the marinade penetrates the meat better.
  3. Prepare the marinade with the lemon juice, crushed garlic, salt, pepper and oil.
  4. Rub the whole fish with the marinade and reserve it in the refrigerator, if possible from the night before.
  5. Preheat the oven to 325 °F (170 °C).
  6. Grease the bottom of the baking tray with butter or oil. Place the washed potatoes cut into rounds, spreading them out evenly.
  7. Place the snapper on top of the potatoes and cover it with onion rounds.
  8. Bake for about 40 minutes in total. During the first half hour keep it covered with aluminum foil so that the meat remains juicy.
  9. Remove the foil, check the doneness and leave it uncovered in the oven, at the same temperature, for 10 more minutes.
  10. Serve hot, fresh from the oven. Enjoy!
