In Cuba, guava sweet with white cheese is a very beloved combination. The contrast between the sweet fruit and the fresh cheese, slightly salty, turns two simple ingredients into a delicious dessert.

This recipe proposes a tropical variant with passion fruit, also known as passion fruit. Its aromatic pulp, with a sweet and acidic flavor, is cooked with sugar until obtaining a thick and shiny homemade jam.

To achieve a pleasant texture, we remove most of the seeds and keep some whole, which add a crunchy touch and make the sweet especially attractive.

Served with fresh white cheese, it is a simple dessert with a perfect presentation for any occasion.

Method

  1. Extract the pulp. Wash the passion fruits, cut them in half and remove all the pulp with a spoon, including its seeds. Weigh 250 g of pulp.

  2. Separate part of the seeds. Reserve approximately one third of the pulp with its seeds. Pass the other two thirds through a fine strainer, pressing gently with a spoon to extract the juice without crushing the seeds. Mix this juice with the reserved portion of pulp.

  3. Add the sugar. Place the passion fruit mixture in a small thick-bottomed saucepan. Add the 150 g white sugar and stir over low heat until it dissolves.
  4. Concentrate the jam. Increase the heat slightly to achieve a gentle boil and cook for about 20–30 minutes, stirring frequently to prevent sticking. It must remain thick, shiny and spreadable. The time depends on the fruit juice and the size of the saucepan.

  5. Check the thickness. Place a teaspoon of jam on a previously cooled plate and wait one minute. If when tilting the plate it moves slowly and keeps a thick texture, it is ready. If it remains liquid, cook for a few more minutes; remember it will thicken as it cools.

  6. Cool the jam. Remove from heat and transfer to a clean and heat-resistant container, preferably wide so it cools faster. Let it cool down for about 10 minutes and then refrigerate for about 25–35 minutes, or until cold and reaches its final consistency. If more time is needed, extend the cooling.
  7. Serve with white cheese. Cut the fresh cheese into four thick portions, place one on each plate and add a generous tablespoon of passion fruit jam on top. Serve cold to enjoy the contrast of flavors.
