Method
- Soak the beans for at least 4 hours.
- Drain them and place them in the pressure cooker with clean water. Add the ham or shoulder bone and the bay leaves.
- Cook under pressure for at least 20 minutes, until they are tender. The time depends on the pressure cooker and the variety of bean, so keep an eye on them to ensure they do not dry out.
- When the beans are tender, remove the meat from the bone and incorporate it into the pot.

CiberCuba - In a frying pan, heat the oil. Add the chorizo cut into rounds and the bacon in cubes, and sauté until they release their fat and begin to brown.
- Add the garlic, onion and red bell pepper chopped into small pieces and stir to integrate them.
- Incorporate the tomato sauce and the spices, and let cook over low heat for about 5 minutes.
- Pour the sofrito into the pot with the already tender beans. Add the washed, peeled and cubed potato and pumpkin in similar-sized cubes. Adjust the salt to taste.
- Cover the pressure cooker and cook for another 10 minutes over medium heat.
- If you want them thick, mash some of the root vegetables and let the broth reduce over low heat until it reaches your preferred consistency.
- Serve accompanied by white rice. Enjoy!
