Beans are a very popular dish in Cuba: in many homes they are cooked two or three times a week. This is our chef's version of red beans, with smoked pork hocks, chorizo and bacon, and with the two root vegetables that almost no one forgives missing in this recipe: malanga and pumpkin.

Ingredients

Method

  1. Soak the beans for about 4 hours.
  2. Soften them with the hocks in the pressure cooker for 25 minutes, or until the bean opens. Reserve the broth.
  3. Remove the hocks and debone them.
  4. In a pot, heat the oil and fry the bacon cut into cubes.
  5. Add the chorizo, also cut. When both release their fat, add the onion.
  6. When the onion is translucent, add the pepper and let it cook for about 5 minutes, stirring frequently.
  7. Add the bay leaves, the deboned hocks and the beans.
  8. Add more or less bean broth, depending on the thickness you want. Cook everything covered for 20 minutes.
  9. Add the malanga and pumpkin, washed and cut into cubes, and let them cook.
  10. Finish by adding the bunch of culantro to release its aroma.
  11. Before serving, remove the culantro and the bay leaves. Serve with white rice.
