Chayote is one of those vegetables that asks for little work and a good seasoning. Here we cut it into 1 cm dice, sauté it with onion and finish it with garlic, cumin and sour orange, the same combination of flavors you recognize from a home-style mojo.

It's a quick side dish to serve with white rice, beans, chicken, pork or fish. The chayote should be tender but intact, juicy, and without liquid pooling at the bottom of the pan.

Method

  1. Wash the chayotes, peel them and cut them in half lengthwise. Remove the hard core or the seed if they have one.
  2. Cut the flesh into even 1 cm dice so they cook uniformly. Dry them well with paper towels.

  3. Cut the onion into thin strips and chop the garlic cloves. Have the cumin, salt, pepper and sour orange juice at hand.
  4. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté it for about 5 minutes, stirring occasionally, until soft and translucent.
  5. Raise the heat to medium-high, add the diced chayote and sauté for 4 minutes, stirring so it is coated with the oil and onion.

  6. Add the water and a pinch of salt, cover the pan and cook over medium heat for 8-10 minutes, until the chayote is tender but holds its shape. Test it with the tip of a knife and adjust the time according to its firmness.

  7. Uncover and let the excess water evaporate for 1-2 minutes, until barely any liquid is left at the bottom.
  8. Add the chopped garlic and the cumin and cook for 30-60 seconds, stirring constantly so the garlic releases its aroma without burning.

  9. Pour in the sour orange juice, stir and cook for 1 minute more. Taste and adjust the salt and pepper. It should be juicy, but without abundant liquid.
