Roasted pumpkin is simple to prepare and tastes delicious. It is the ideal side dish for a pork cut or a fish fillet.

Pumpkin belongs to the cucurbit family: creeping plants that produce large fruits protected by a firm rind. Some researchers believe it originates from America, while others think it comes from southern Asia. What is certain is that it has been cultivated for centuries, initially more for its seeds (those we Cubans usually throw away) than for its flesh.

Method

  1. Wash the pumpkin and cut it as you prefer. The most elegant way is in 2 cm thick wheels or cubes, trying to make all pieces similar in size.

  2. Preheat the oven to 220 ºC (428 ºF).
  3. Grease the baking tray with oil and place the pumpkin pieces on it. Season with salt and pepper and add the onion cut into fine julienne strips.
  4. Lightly drizzle the pumpkin with a couple of teaspoons of the remaining oil. Add the whole garlic cloves and, if you like, the cherry tomatoes or diced tomato.
