Neapolitan preparations have something in common in international gastronomy: they include tomato, cheese, and are usually browned. This chicken meets all three criteria.
It is not a common recipe in Cuba. I learned it from the magazine Bohemia, which used to publish many recipes by Nitza Villapol and other women dedicated to studying Cuban food and diversifying the tastes of the island's diners. It is a delicious, easy-to-make, economical but hearty dish, ideal for a meal where you want to impress.

Method
- Cut the breasts into fillets. If you use boneless chicken pieces, pound them to make them flat.
- Season the meat with salt and pepper to taste, add the lemon juice, and refrigerate it.
- Prepare a sofrito with the onion, garlic, and pepper well chopped or cut very finely.
- When the sofrito is almost ready, add the tomato sauce, stir, and let it cook for a few minutes until the sauce is thick and shiny. Remove from heat and set aside.

CiberCuba - In a pan, brown the chicken breasts. They should not be overcooked, as they will finish cooking in the oven.

CiberCuba - In an oven-safe dish, spread the reserved sauce and place the breasts on top. If you wish, add a layer of onion cut into thin rings.
- Cover everything with the cheese slices and bake at maximum temperature for 5 to 8 minutes, until golden brown to your liking.

CiberCuba - Remove the dish from the oven carefully and bring it to the table on a heat-resistant surface.

CiberCuba - Before serving, sprinkle finely chopped parsley and, if desired, a drizzle of olive oil. Enjoy!
