To cook the meat (if not already prepared)

For the fried shredded pork

Method

To cook the meat (if not already cooked)

  1. In a pot with water, place the pork tenderloin along with the salt, bay leaf, oregano, cumin, pepper, garlic and onion.
  2. Bring to a boil, then reduce to medium heat and cook until the meat is tender: about 25 minutes in a pressure cooker or longer in a conventional pot.
  3. Check the texture with a knife: if it enters easily, it is ready. Let it cool.

For the fried shredded pork

  1. Shred the cooked or leftover meat into fine strands. Season with salt, oregano and cumin, and set aside.
  2. Crush in a mortar, or chop with a manual chopper, the garlic cloves and the onion.
  3. In a frying pan or deep casserole over medium heat, melt the lard or heat the olive oil.
  4. Add the garlic and onion and cook for a few minutes until tender.
  5. Add the pepper (or peppers) and sauté everything together.
  6. Incorporate the shredded meat and mix well.
  7. Add the orange juice and lemon juice.
  8. Increase the heat and stir constantly so the meat begins to brown slightly. Use kitchen tongs or a large spoon. Watch out for burning! Do not let the meat fry too much, as it could harden when cooling.
  9. When the strands are golden but still juicy, turn off the heat and remove the meat so it does not continue cooking with the heat of the burner.
