Yellowtail snapper has a mild flavor and firm-textured flesh, so it is excellent baked in the oven, grilled, or pan-seared. This version cooks on a bed of potatoes and onion, with a simple garlic and lemon marinade.

Ingredients

Method

  1. Clean the fish and make two small crosswise cuts on each side so the seasonings penetrate the flesh better.
  2. Season the yellowtail snappers with salt and pepper to your taste, rub them with the crushed garlic, and drizzle them with the lemon juice.
  3. Let them rest for half an hour. Meanwhile, preheat the oven to 170 °C.
  4. Peel the potatoes and cut them into slices. Cut the onion into julienne strips.
  5. Grease the baking tray with olive oil, place the potato slices and the onion, and sprinkle with salt to taste.
  6. Place the fish on this bed of potatoes and onion and put it in the oven for about 20 minutes.
  7. Watch the doneness closely and, every time you check it, baste the fish with the juices it releases so that it remains juicy and flavorful.
