A delicious dish to enjoy at home with family and friends. The squid is stewed with a good criollo sofrito, red wine and its own ink, which gives the sauce that characteristic black color and an intense sea flavor. Enjoy!

Method

  1. Clean the squid and set aside the ink sacs.
  2. Cut the squid into pieces, as well as the tentacles.
  3. Heat the oil and lightly fry the squid.
  4. Add the sofrito ingredients little by little: the garlic, onion, ají cachucha and a little parsley.
  5. Add the tomato puree, wine, salt and pepper.
  6. Crush the ink sacs in a mortar, mix them with a little of the sauce and add them to the pot.
  7. Let it cook over low heat for about 20 minutes.
  8. If you want to thicken the sauce, add a little toasted and grated bread.
  9. When serving, add 2 or 3 tablespoons of finely chopped parsley and, if you like, a little more crushed garlic or finely chopped raw onion.
