creamy cheese soup is an appetizing dish served as a hot appetizer. It is ideal for winter meals when something comforting is desired.

Although it has French roots, we adopted it as our own in Cuban cuisine.

Method

  1. In a saucepan over low heat, combine the butter with the flour and cook until the mixture begins to turn golden.
  2. Add the milk gradually, stirring, until a thick cream forms.
  3. Once the ingredients are well integrated, let it cook for a couple of minutes.
  4. Add the cheese and do not stop stirring to prevent it from sticking to the bottom or forming lumps.
  5. When the cheese has melted into the cream, taste and adjust the salt to your liking.
  6. Add the pepper and nutmeg and mix well.
  7. If you notice it thickens too much, add a little water or broth until you achieve the desired consistency. Serve very hot. Enjoy!
