Cornmeal keques are made with a base of cooked corn that is allowed to cool before mixing it with egg, cornstarch and milk. The batter is spooned into a lightly greased skillet to obtain flat, golden cakes.
This adaptation maintains that method and specifies quantities, size and batch times. They are served hot, as a side dish or savory snack.

Method
- Place the 500 ml water, salt and 10 g butter in a saucepan. Heat and add the cornmeal in a rain-like stream, stirring to avoid lumps.

Calculate about 20–25 minutes or the time indicated for its grinding. If it thickens before cooking, incorporate the reserved hot water gradually; at the end it should remain a dense paste.

Repeat with the remaining batter, using the rest of the butter to grease when needed. For about 12 units, plan approximately three batches of four cakes. Serve hot.
