This is one of the recipes prepared today in eastern Cuba to substitute for the lack of potatoes. In the west, the potato is a fairly common product in markets and in the kitchen, but in the east of the island the reality is different and that tuber has become a true luxury. Cuban food classics, such as meat with potatoes, can be quite difficult to make, and alternatives like sweet potato are often used.
In the cuisine of other countries, such as India, it is common to use green papaya as a starchy vegetable. As is frequent in the markets of eastern Cuba, it began to be utilized there as well. Traditionally, ripe papaya is eaten in smoothies or raw, and green papaya was only used for sweet preserves in syrup. However, many families began to use it as a potato substitute, combining it with meat, for example. While it is green, it can be boiled and used in various recipes: with other vegetables or, as here, in a cold salad dressed with homemade mayonnaise.
