Method
Caramel
- Put ½ cup of sugar in the flan mold and place it over heat until caramelized.
- Tilt the mold to caramelize all the walls well and let it cool.
Flan
- In a deep and comfortable container, mix the eggs, the three milks, and the rest of the sugar, and blend everything well.
- Add the guava paste cubes and the cream cheese, incorporating them into the mixture but leaving thick fragments, so that when the flan cooks those flavors are found well defined in the mouth.
- Pour the mixture into the caramelized mold and cover it well.
- Place the mold in the pressure cooker and add water until it covers two-thirds of the height of the mold. Make sure the water does not enter the flan in any case.
- Cook over medium heat for about 30 minutes. To know if it is ready, insert a skewer: it must come out clean.
- Let the flan cool for an hour before unmolding it.
Guava topping
- Place the guava cubes over medium heat with the couple of tablespoons of sugar and the white wine.
- Stir until they dissolve and a light jelly forms. Do not let it cool, because it tends to solidify quickly and afterwards it will not be easy to cover the flan.
Assembly
- Unmold the flan once cold and cover it with the freshly made guava jelly.
- Put it in the refrigerator for 1 to 2 hours and serve it accompanied by cream cheese balls.
