Method

Preparing the mixture

  1. Grate the malangas (or yams) with a grater with medium-sized holes; this will give the mixture the right texture.
  2. Crush the garlic cloves with a pinch of salt until they form a paste and add them to the grated malanga.
  3. In a separate bowl, beat the two eggs and add them to the mixture.
  4. Incorporate the two tablespoons of vinegar, which will make the fritters crispier and enhance their flavor.
  5. Mix everything well until you obtain a homogeneous dough. If you like, add chopped parsley, pepper or onion powder to give it your personal touch.

Frying

  1. Heat plenty of neutral vegetable oil in a frying pan or deep pot. Make sure it is very hot before starting.
  2. Take portions of the mixture with a large spoon, without draining or cleaning it: the uneven edges will give a crispier texture.
  3. Drop the portions directly into the hot oil, without filling the pan too much so that the oil does not lose heat.
  4. Let them brown on one side and then turn them carefully so they brown evenly.
  5. Remove the golden fritters and place them on absorbent paper to remove excess oil.
  6. Repeat until you finish the mixture and serve the hot fritters as an appetizer or side dish.
