Eating raw vegetables like carrots is very beneficial for your body. Carrots are rich in potassium, phosphorus, and vitamin A, which is why they are so recommended for eye health.

This salad is delicious and extremely easy to make: it combines the sweetness of the carrot with the intense flavor of black olives and capers, all bathed in a simple vinaigrette.

  1. Wash the carrot and tomato well.
  2. Grate the carrot into a deep bowl.
  3. Cut the tomato into cubes and incorporate it with the carrot.
  4. Add the black olives, whole or cut in half, and then the well-drained capers. Mix everything together.

  7. Let the salad rest in the refrigerator for 15 minutes so the vegetables can marinate in the dressing.
  8. Serve it fresh, preferably in a glass bowl. Enjoy!
